Baked Cornflake Chicken Tenders

These crunchy gluten free chicken tenders are a healthier take on chicken nuggets, sure to be a hit with kids and adults alike.

Here’s how you do it

  1. Preheat the oven to 200C/180C fan.
  2. Bash the cornflakes in a sandwich bag, or briefly pulse in a food processor - you want them to have texture still and not be too fine so don't overdo it.
  3. Put the beaten egg in one bowl, the flour in another with salt and paprika if using and crushed cornflakes in a third.
  4. Dip the chicken tenders one or two at a time into the flour to coat thoroughly, shaking off the excess, then the same with the egg, then roll until well covered in the cornflakes.
  5. Transfer the crumbed chicken to a paper lined tray and bake for 15-20 minutes or until the largest pieces are cooked through
  6. Serve with ketchup or BBQ sauce for dipping.


  • 400g chicken breast mini fillets
  • 100g gluten free cornflakes
  • Pinch paprika (optional)*
  • Pinch salt*
  • 3 tbsps gluten free flour*
  • 1 large egg
