Pre-heat the oven to 180 degrees C. Place feta in parchment making sure you have enough room around the perimeter to loosely wrap.
Drizzle with two tablespoons of honey, a glug of olive oil, handful of pinenuts and six sprigs of thyme. Gather the corners of the parchment and twist them at the top to seal in the flavours.
Bake for ten minutes, open up the parcel at the table and serve with crusty bread.
