Strawberry & White Chocolate Scones

Nothing says summer like strawberries and scones, brought together in these tasty bakes. Delicious as they are with a cup of tea or enjoy with clotted cream and fresh berries for an indulgent summertime treat.

Here’s how you do it

  1. Preheat oven to 200℃/180℃ and line a large baking sheet or two smaller baking sheets with greaseproof paper and a dusting of flour.
  2. Sift the flour, baking powder, salt and caster sugar into a large bowl.
  3. Rub the cubed, cold butter in to the dry mix until it resembles breadcrumbs.
  4. Finely chop the chocolate buttons, mix well with the flour and butter mixture.
  5. Remove the stalks and tops of the strawberries, chop fairly finely. Add to the flour mix and combine well.
  6. Mix the cream, water and one egg in a jug, mix into the flour mixture using a cutlery knife then bring together with your hands in the bowl. If it’s really dry and not coming together, add a dribble of extra water but not more as the more it’s mixed the wetter the strawberries become and it’ll be too sticky to handle.
  7. Turn the dough out onto a floured surface and knead/pat into a rectangle about 20cm x 10cm. It will be quite a sticky mix. Using a sharp knife cut into 9 squares, then each square into a triangle. Carefully lift onto the paper lined tray (reshape a little if needed on the tray).
  8. Brush the tops of the scones lightly with beaten egg, sprinkle with a little granulated or cane sugar if using then bake for 15-20 minutes or until golden brown. Cool a little and enjoy warm or cold.


  • 400g self raising flour
  • 1 tsp baking powder

  • 50g caster sugar
  • 85g unsalted butter
  • 300g strawberries
  • 100g white chocolate buttons, finely chopped
  • 2 tbsps double cream & 1tbsp water
  • 1 cold medium egg plus 1 for glazing
  • A little granulated or cane sugar for topping (optional)*
