Oysters and Mignonette



A classic sharp French dressing that pairs perfectly with our fresh oysters from the Fresh Fish Shop.

Here’s how you do it

  1. Finely chop the peeled shallots or onion. If using red onion, soak in cold water for 10 minutes then drain well before using - this helps to take some of the pungency out.
  2. Mix the chopped shallot or onion with the red wine vinegar, pepper and a big pinch of Maldon salt.
  3. Drizzle the dressing over the oysters and serve with lemon wedges.


  • 12 oysters, shucked
  • lemon wedges to serve


  • 50ml red wine vinegar
  • 2 tbsps very finely chopped shallots (approximately 2 shallots) or red onion
  • 1/4 tsp black peppercorns, coarsely ground
  • Maldon salt
