Organic Sweet Potato and Black Bean Nachos

To celebrate all things organic, this #OrganicSeptember, we're sharing some delicious recipes from Biona. The store cupboard staple brand has become synonymous organics, through their commitment to sustainable farming methods, 100% traceability and working with farmers who don't use chemical pesticides or herbicides on crops. This recipe is Biona Organic's healthy take on crowd pleasing nachos! Featuring roast sweet potato slices and crumbled tortilla chips with organic Biona black beans and all the topping you'd expect - creamy avocado, salsa, indulgent melted cheese and tangy pickled onions. Make this into a vegan feast by using vegan cheddar style grated and oat fraiche.

Here’s how you do it

  1. Heat the oven to 220°C/200°C fan. Toss the sliced sweet potatoes in the oil and salt, then bake in a single layer on a large baking sheet for 30 minutes until caramelised and tender.
  2. Thinly slice the red onion with the red wine vinegar and a pinch of salt in a small bowl or jar. Mix or shake well and set aside to quick-pickle while you prepare the rest.
  3. Once the potatoes are out of the oven, turn the grill to a high heat. Arrange the sliced cooked potatoes in a dish and top with the black beans and dollops of tomato salsa.
  4. Crush the tortilla chips in a bowl and mix with the grated cheese, then sprinkle over the potatoes and beans. Grill for 6-8 minutes until everything looks golden and bubbling.
  5. Toss the chopped avocado with the lime zest and juice, then scatter over the nachos with the fresh coriander, pickled red onion and spoonfuls of sour cream. Serve straight away and enjoy!

  • 750g organic sweet potatoes, sliced into thin rounds
  • 1 tbsp olive oil*
  • 1 organic red onion, finely sliced
  • 2 tbsp organic red wine vingear*
  • 400g tin Biona Organic Black Beans, drained and rinsed
  • 200g organic tomato salsa
  • 75g organic tortilla chips
  • 100g organic grated cheddar
  • 1 large ripe organic avocado, chopped
  • 1 organic red chilli, sliced
  • Finely grated zest and juice of 1 organic lime
  • A handful fresh coriander
  • Organic sour cream to serve
