Finely slice onion and add to a pan with a glug of oil on a low heat. Sautee until translucent. Add the beef along with a teaspoon of salt and chilli flakes. Break up the mince and move around the pan so it cooks evenly. This should take 5 minutes. Add the peas and cover.
Whilst the beef is cooking, break the lettuce cups from the head and wash. Set aside.
To make the egg fried rice ideally you want to be using day old rice, or at the very least rice which has been cooked and cooled - you don't want it sticking together. Beat the eggs together with a drop of sesame oil then add to a really hot non stick pan. It should set within seconds. Break up with chopsticks, slide out of the pan. Add another glug of oil to the pan and turn the heat up high. Keep moving the rice around the pan for 4 minutes until heated through and reintroduce the egg.
Serve everything on sharing platters in the middle of the table. Spoon the mince into the lettuce cups with a little rice, pinch the sides together to make parcels and dip into chilli oil and soy.
