Pre-heat the oven to 200 degrees C. Bake the potatoes for 40 minutes, allow to cool slightly.
Slice potatoes in half and scoop out flesh, leaving a little sweet potato border, pop the skins back in the oven whilst you're making the filling.
To the sweet potato flesh add milk, any grated veggies you like, torn mozzarella (leaving a little to dot on top) and salt and pepper. Mash until creamy.
Remove the skins from the oven and scoop in the filling. Dot a few pieces of mozzarella on top, drizzle with olive oil and bake for 10-15 minutes until the topping is golden. Scatter herbs over the top & serve with sour cream for extra indulgence!
