Butterbean, Tomato and Sobrasada Traybake

Vibrant and flavourful, this traybake lets the oven do all the hard work. Adding stock to the beans allows them to gently braise and absorb the flavours of the sobrasada and roasted tomatoes.

Here’s how you do it

  1. Preheat the oven to 200℃. Peel the onion and cut into wedges. Cut the pepper into thin strips.
  2. Add to a large roasting dish with the whole tomatoes, drizzle with a little oil and salt and roast for 25 minutes.
  3. Add the drained rinsed beans, sobrasada (in little balls) and stock, then cook another 20 minutes. Give everything good stir and let sit for a few minutes before serving. 4.Serve with lemon wedges, chilli yoghurt and torn herbs over the top.


  • 1 punnet piccolo tomatoes
  • 1 punnet cherry tomatoes
  • 1 red pepper or pointed pepper
  • 1 medium red onion
  • 1 jar Bold Bean Co butter beans, drained and rinsed
  • 100g sobrasada
  • 200ml vegetable or chicken stock*
  • olive oil*
  • salt & pepper*

To serve

  • 3 tbsps natural yoghurt
  • A drizzle of chilli oil
  • Lemon wedges
  • Torn parsley and dill
