Halve and thinly slice peppers removing the pith and any seeds. Thinly slice red onions.
In a heavy based pan add oil and heat gently, add red onion and cook on low for ten minutes, not allowing to onion to brown.
Add peppers and garlic, cook for a further 10 minutes.
Add tomatoes whole & cook for 30 minutes.
Smush some of the tomatoes, add half a cap of red wine vinegar and season generously.
