Lazy Healthy One Pot Pasta

This lazy one pot pasta dish is your next favourite weeknight supper - it's super quick, packed full of flavour and incredibly moreish. The kale soaks up that delicious lemon and chilli sauce and adds a wonderful crunch at the end.

Here’s how you do it

  1. Boil 1 litre of water in the kettle. Put the spaghetti, tomatoes, lemon zest, garlic, red chillies, salt, pepper and olive oil into a big saucepan.

  2. Pour in the boiling water then turn on the heat and get the water to a rolling boil. Give everything a good stir then lower the temperature, put the lid on and let everything cook together for 5 minutes.

  3. Take off the lid and stir the again. Put the lid back on and cook for a further 4-5 minutes until the liquid has almost evaporated.

  4. Remove the lid and add the kale leaves. Stir it all round so the the kale starts to wilt and soak up the sauce.

  5. Add the basil and pine nuts and serve immediately.

  • 400g spaghetti
  • 500g cherry tomatoes, halved
  • 1 tbsp lemon zest
  • 4 garlic cloves, minced
  • 2 red chillies, finely chopped
  • 1 handful green kale, stalks removed
  • 1 handful red kale, stalks removed
  • 1 handful basil
  • 1 handful pine nuts, toasted
