Blackberry Ripple Frozen Yoghurt

4-6 people

15 minutes (plus freezing overnight)

Homemade creamy soft serve frozen yoghurt is the perfect evening treat (that won't leave you feeling guilty if you finish the whole tub). Dorset Dairy strained yoghurt is Dorset's answer to Greek yoghurt, it's ultra creamy and indulgent. Blended with local honey and freshly picked blackberries, this is a winning combination.

Here’s how you do it

  1. If you've got an ice cream maker, pre-freeze the inner container overnight. If not, chill an ice cream tub (preferably metal).
  2. Wash then blend the blackberries for about 15-20 seconds in a food processor with 1 tbsp of the honey to make a chunky puree. Set aside.
  3. Stir the remaining honey through the yoghurt until combined.
  4. If you're using an ice cream maker, pour in the yoghurt and churn to a soft serve texture. When you've achieved your preferred texture, remove the paddle, pour in the blended blackberries and stir to create a ripple. Enjoy immediately, or freeze until ready.
  5. Alternatively, pour the yoghurt into the chilled tub. Freeze for 2 hours, then use a fork to stir the yoghurt and break up any crystals that have formed. Leave for a further 2 hours then repeat. Swirl through the blackberries and return to the freezer for a final 2 hours. Scoop into bowls and serve.
