Pitta Bread

Makes 8 pittas

30 minutes (plus proving)

Homemade pittas are very simple to make and highly rewarding. Watching the little pittas puff up during baking brings immeasurable joy. There is simply no comparison to their shop bought counterparts!

Here’s how you do it

  1. Add the flour, yeast, sugar and salt to a bowl. Mix with your hands, adding the water as you mix, until you have a soft but not sticky ball of dough.
  2. Transfer the dough to a lightly oiled work surface. Knead for 5-10 minutes, until it is soft and smooth.
  3. Place the dough into a lightly oiled, clean bowl. Cover with a tea towel and leave in a warm area to prove until doubled in size.
  4. Preheat the oven to 250°C and place a baking tray on to the middle shelf.
  5. Once the dough has doubled in size, transfer it to a lightly floured work surface and divide into 8 balls.
  6. Use a rolling pin to roll out each ball into an oval shape, with a 3-5mm thickness.
  7. Place the pittas on to the hot baking tray, this may need to be done in batches.
  8. Bake for 5-10 minutes. The pittas will puff up majestically and colour. Remove from the oven and cover with a tea towel until they are cool.


  • 500g strong white bread flour
  • 1 tsp dried yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 300ml lukewarm water
