Roasted Brussels Sprouts with Lemon and Chilli

These are so delicious you could just as easily serve them up as a party snack even if they are intended as a side dish. Roasting these baby brassicas gives them a lovely caramelised edge and partnering them with lemon and chilli makes them incredibly addictive.

Here’s how you do it

  1. Preheat your oven to 200°C/gas mark 6. Place a baking tray or roasting dish in the oven to heat up.

  2. Halve each sprout, and thinly slice your lemon. Place it all into a bowl along with the olive oil, chilli flakes and a good pinch of salt and pepper. Toss well.

  3. Place on the preheated baking tray or roasting dish. Give it a shake to arrange into a single layer.

  4. Roast on the top shelf of the oven for 10-15 minutes, or until the sprouts have turned a nice caramel colour around the edges.


  • 500g Brussels sprouts
  • 1 organic lemon

What you'll need

  • 2 tbsp olive oil
  • a good pinch of chilli flakes
  • sea salt and freshly ground pepper
