Hot Choc Puds

These hot choc puds are simple to make and are a perfectly delicious way to end dinner.

Here’s how you do it

  1. Melt the butter and chocolate with the coffee and salt in a bowl placed over a pan of simmering water.
  2. Whisk the eggs and sugar in a separate bowl until pale and fluffy and a ribbon trail is left on the surface when the whisks are lifted.
  3. Carefully fold the melted chocolate into the eggs, incorporating well but not knocking out the air.
  4. Transfer the mixture into ramekins and chill in the fridge for 20 minutes.
  5. Preheat the oven to 180℃. Cook the choc pots for 8-10 minutes, until just set but still gooey. Sprinkle with nuts and serve with cream.


  • 60g dark chocolate, broken into pieces
  • 60g butter
  • 1 egg
  • 1 egg yolk
  • 30g caster sugar
  • pinch of salt
  • 1/2 tsp instant coffee
