Hot Dogs with Beer and Mustard Onions

This recipe gives the humble hot dog a gourmet update with high quality sauces, brioche buns, and super simple but exceptionally delicious rich oniony topping. Ditch a green salad in favour of grilled little gem for a modern look and tasty smoky flavour. This recipe will make enough onions to generously top four hot dogs plus extra which will keep in the fridge in a sealed container for 5 days.

Here’s how you do it

Beer and Mustard Onions

  1. Peel and thinly slice the onions and add to a lidded saucepan with the mustard, sugar, beer, salt and pepper
  2. Cook over a low heat with the lid on for 25-30 minutes, stirring occasionally, until meltingly soft and the sauce is syrupy - if its still quite liquid then reduce with the lid off for 5-10 minutes.

Hot Dogs

  1. Grill or barbeque the sausages until browned all over, ensuring they are cooked through with no pink remaining
  2. Cut the little gem in half lengthways and grill cut side down on the barbeque or a very hot griddle pan - press down on them with a spatula to get a nice char on them, for around 30 seconds, then cut each in half again length ways to give 4 wedges.
  3. Cut a slice down the centre of each bun, fill each with 2 sausages per bun and top with the beer and mustard onions, and your choice of sauces.


Beer & mustard onions

  • 2 large red onions
  • Pinch salt
  • Pinch pepper
  • 1 tbsp mustard
  • 1.5 tbsps sugar
  • 150ml beer

Hot Dogs

  • 4 hot dog buns
  • 8 sausages
  • Ketchup
  • Chilli mayo
  • Mustard

  • 1 little gem lettuce
