Za’atar Prawns and Jewelled Couscous

Sweet, juicy sustainably farmed prawns are perfectly paired with middle eastern spices, served on a bed of jewelled couscous. Quick, easy and delicious.

Here’s how you do it

  1. Peel and finely slice the red onion and fry in a little vegetable oil and pinch of salt until soft
  2. Add the sliced garlic and cook for a couple of minutes
  3. Put the couscous in a medium heat proof bowl, pour 200ml boiling water over, season and mix well. Cover with a pan lid or clingfilm and stand for a few minutes until all the water is absorbed, then fluff with a fork to separate the grains.
  4. Mix the sliced cooked onions and garlic into the couscous along with the chopped apricots, pistachios, chopped herbs, pomegranate seeds, olive oil, lemon zest and juice.
  5. Prep the prawns - remove the heads and shell down to the tail and with the tip of a sharp knife, then devein - this is to remove the digestive tract (the black line down the back of the prawn). Toss the prawns in the oil, spices, za’atar and flour then fry in a clean pan over a medium/high heat in a little more oil for 3-4 mins until curled and pink with no grey still showing.
  6. Divide the couscous between two bowls and top with the prawns, and a wedge of lemon to serve if you like.



  • 100g wholemeal couscous
  • ½ red onion, sliced
  • 1 garlic clove
  • A small handful of coriander/parsley/mint or a mix, roughly chopped
  • 5 dried apricots, finely chopped
  • 2 tbsps finely chopped pistachios
  • Seeds from 1 pomegranate
  • Zest and juice of a lemon
  • A drizzle olive oil
  • Salt & pepper


  • 350g prawns
  • 1 tsp veg oil
  • 1/2 tsp sumac
  • a pinch paprika
  • 2 tsps za’atar
  • ½ tsp flour
