Apple Cinnamon Crumble Cake

This teatime treat combines vanilla sponge with a moreish cinnamon apple crumble topping. Delicious with a cup of tea or serve for pudding with vanilla custard, cream or ice cream.

Here’s how you do it

  1. Preheat the oven to 160°C/140°C fan/320°F. Grease a 20cm loose bottom or springform cake tin and line the base with greaseproof paper.
  2. Peel, core and chop the apple into 2-3cm chunks, toss with 2 tbsps sugar and 1 tsp ground cinnamon.
  3. Make the crumble topping by rubbing the butter into the flour (or process in a magimix) then add the sugar, mixing well.
  4. In a stand mixer or with a hand whisk, cream the softened butter caster and sugar until light and fluffy.
  5. Beat the eggs, yoghurt and vanilla lightly in a jug. Sift the flour, baking powder and salt together.
  6. Add a third of the egg mix, beating to incorporate, then a third of the flour and mix until just combined. Repeat, alternating and finishing with the flour, add the milk with the final addition of flour.
  7. Spoon the mix into the prepared tin, smoothe the batter down then scatter with the cinnamon apples. Push the apples into the cake batter slightly, then top with the crumble - make sure the whole surface is covered but don’t press the topping down too much.
  8. Cook for 1 hour 20 minutes or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 20 minutes then carefully remove the tin.

  • 175g unsalted butter, softened
  • 175g caster sugar, plus an extra 2 tbsps
  • 3 medium eggs at room temperature
  • 300g plain flour
  • 2 level tsps baking powder*
  • ¼ tsp salt*
  • 1 tsp vanilla extract*
  • 100g natural yoghurt
  • 1 large bramley apple (about 350g)
  • 1tsp ground cinnamon*

Crumble

  • 100g plain flour
  • 50g caster sugar
  • 50g cold unsalted butter, chopped into small pieces
