Irish organic Glenarm salmon is again another viable alternative to wild fish. This small farm situated off the coast of Northern Ireland produces a fish which will satisfy any discerning salmon connoisseur.
Our production techniques and smoking processes are still very traditional and our grading, filleting, curing and cutting are still mostly done by hand. We chip all our own oak wood for smoking, which gives our smoked products a unique distinctive taste. We can either hang or lay out the fish for smoking, depending on your preference. We can also design recipes and specifications to suit any individual requirements you may have.

Environmental Commitment Zero Carbon Footprint Severn & Wye Smokery have a very strong environmental policy; we believe that our impact on the environment should be a positive one. We have analysed every aspect of our business and tried to put a positive environmental slant on it. Wind Energy Over the past 4 years, we have been working tirelessly on research and survey work to construct a wind turbine behind our smokery. We have in front of our local planning authority our application for a 60 metre, 1.25MW wind turbine, and we feel very confident that we will be granted permission to erect this turbine. The turbine will supply enough wind energy to supply our smokery and our two local primary schools. Wood for Smoking Over the past 20 years we have felled only five oak trees and to replace them we have planted 350 British deciduous trees (oak, horse chestnut, ash, cider fruit etc). The main trunks have been used in the construction of our smokery, one given to the local church for gate posts, and the off-cuts, boughs and branches have been chipped up for our smoking materials. We also work very closely with a local sawmill that specialises in cutting used whisky and Calvados barrels in half for garden centres. This process produces a strip of wood from the centre of the barrel which is waste. We take this from him and chip it up and mix it with our own wood to produce a unique blend of high quality oak for our smoking process. Waste Packaging Some of our fish arrive at the smokery packed in polystyrene boxes; we clean and compact all polystyrene and it is all then taken away and recycled.
